Steps

1
Done

Peel the bananas and place them into a mixing bowl.

Add 1 tsp of cinnamon and 1 Tbsp of honey to the bananas. Using a fork, smash the bananas, cinnamon and honey together. Set aside for now.

2
Done

Next, we will prepare the egg mixture. Add 5 eggs, 1 tsp of cinnamon, ¾ cup of brown sugar, ¼ cup of milk, and 1-1/2 Tbsp of vanilla into a mixing bowl.

Using a whisk, beat the egg mixture together until all ingredients are mixed well. Set aside for now.

I prefer to use Watkins Pure Vanilla Extract. Pure vanilla is more flavorful and doesn’t have that artificial taste.

3
Done

On a cutting board, slice bread into 1-inch wide slices.

4
Done

Now, let’s make pockets in the slices of bread for the filling. Place a slice of bread on the cutting board and cut a slit about ¾ of the way into the center of the bread. Do this for each slice of bread then set them aside for now.

5
Done

Let’s stuff the bread. You’ll need the casserole dish for this step. Holding a slice of bread in your hand, gently open the pocket and spoon in some of the banana filling.

Lay the stuffed bread on its side in the casserole dish. Repeat until you’ve filled all the bread.

6
Done

Pour the egg mixture over the bread in the casserole dish. Be sure to cover all the bread. Set it aside on the counter to let the egg mixture soak into the bread for 2 minutes.

7
Done

While the bread is soaking, heat the griddle to 300 degrees.

I use a Presto Electric Griddle. I bought it for around $30 at Walmart and use it all the time. Great price and quality.

8
Done

After the bread has soaked, spray the griddle with non-stick vegetable cooking spray.

Place the stuffed bread flat side down onto the hot griddle and grill for 3-4 minutes or until the bread is golden brown.

You can check the bread by gently lifting it up with a spatula and looking underneath. If the bread looks a little wet, leave it on the griddle for another minute or so.

9
Done

After 3-4 minutes or when the bottom has cooked/browned enough, using a spatula, flip the bread over to cook the other side for 3-4 minutes.

10
Done

Brown the sides of the bread for 30 seconds at a time until you’ve cooked all sides.

11
Done

When done, remove from the griddle and place on a plate. Drizzle maple syrup over the top and sprinkle a little or a lot of confectioner’s sugar over the syrup.

Enjoy!

*This French toast can be refrigerated and reheated in the microwave without losing the quality and taste.
