Directions
What makes this chili the best chili recipe without beans, you ask? Well, for starters, there are no beans! Plus, it’s super easy and takes less than an hour to cook and serve. Of course, you can cook it longer if you aren’t in a hurry. It’s totally up to you!
Another great thing about this recipe is the ingredients needed are common and readily available in any grocery store. I also use lean ground beef (gotta watch my figure, lol), onions (kids don’t even notice them), my own mix of seasonings to give it just the right flavor, salt and spice without making it too spicy for the kiddos, organic tomato paste, sugar in the raw because it’s less processed and helps reduce the acidity in the sauce, and sweet corn kernels to give this chili a little sweet crunchy yumminess.
Enjoy this chili as is or top it with shredded cheese (my fave). My boys like it with cheese and ranch. Ranch, you ask? Yes, thanks to my dear husband (who is a self-proclaimed Billy goat) the boys love it in their chili and with pizza. And, my hubby tops his chili with ranch (of course, lol), sour cream, cheese, and jalapenos.
Oh, by the way, this chili freezes well! So, double or triple and freeze away so you have some on hand for one of those “I don’t feel like cooking” nights.

Dice the whole yellow onion on a clean cutting board. Place the pieces in a 5-quart pot and turn the heat on the stove to medium-high (#6 or 7 on some stoves). *For our younger audience: Dice means to cut something into square pieces. |

Place the 4 pounds of ground beef into the pot with the onions. Using a wooden spoon or hamburger meat chopper, break up the beef into small pieces. Stir the meat and onions around until all pieces have turned brown in color. Once browned, pour the beef and onions into a strainer or colander to drain the excess fat (grease) from the beef. Place the drained beef back into the pot. *You want to drain the excess fat from the beef because it's better for you and it won't leave a greasy feel in your mouth. |

Add the minced garlic to the pot with the beef and onions then stir it around the pot for a minute. |

Add the tomato paste to the pot then stir everything together for just a minute or until the tomato paste is covering all the beef. |

Add the 5 cups of water then stir everything together. |

Add the chili powder, paprika, cumin, onion powder, garlic powder, salt, sugar, and corn kernels to the pot then stir it all together. |

Cover the pot with a lid and cook for 30-40 minutes. You should stir the chili after about 15 minutes so it doesn't stick to the bottom of the pot. |
