This Breakfast Casserole is filled with crispy bacon, eggs, and cheesy hash browns! Yummm!

Preheat your oven to 350 degrees.

Heat your griddle to 350 degrees.

Lay the slices of bacon on the griddle (do not overlap the strips) and cook for 3-4 minutes on one side or until brown and crispy. Then, using a pair of tongs or a fork, turn the bacon over and continue cooking for 2-3 more minutes.

*You want the bacon crispy so it isn't chewy in the casserole. It's also easier to cut or crumble crispy bacon.

While the bacon is frying, set out a plate and line it with a couple of paper towels. The paper towels will soak up the excess fat or grease from the bacon.

When the bacon is fully cooked, set the strips on the paper towel lined plate. Using another sheet of paper towel, pat the top of the bacon strips to remove any fat or grease that is sitting on top.

On a cutting board, use a sharp knife to dice the onion then place the diced onion in a mixing bowl.

Add the eggs, evaporated milk, Tony's creole seasoning, and salt to the onions. Using a whisk, beat all ingredients together.

*A lot of breakfast casseroles call for milk instead of evaporated milk but I have learned evaporated milk adds a creaminess that milk just can't.

Spray the 9x13 casserole dish with non-stick, vegetable cooking spray.

Evenly spread 4 cups of hash browns in the bottom of the casserole dish.

Next, sprinkle the 1 cup of mild cheddar cheese over the hash browns.

*I use Oreida Shredded Hash Browns because of the quality and consistency of their product, but, you can use whatever brand you like.

Now, stack the bacon strips on the cutting board and chop them up into small pieces and sprinkle the bits evenly over the cheese.

If the bacon is crisp enough, you can crumble the bacon in your hands instead of chopping it up with a knife. It's up to you.

Pour the egg/milk mixture, evenly, over the casserole.

Bake for 38-40 mins.

*To test for doneness, you can stick a fork in the center of the casserole to see if any of the egg mixture is still wet and sticks to the fork. If it does, let the casserole bake 2 more minutes or until a clean fork inserted in the center comes out clean.

Lastly, the top will look a little wet, don't worry, just lightly press on the top to see if the egg mixture is cooked. If it doesn't stick to your finger, then it's done! :)
