3 pounds Beef Chuck Tender Roast

1 tablespoon Olive Oil

3/4 cup Onions, diced

3/4 cup Bell Pepper, diced

1 tablespoon Garlic, minced

1-1/4 cup Chicken Broth

1 tablespoon Worcestershire Sauce

1 tablespoon Creole Seasoning*I prefer Tony Chachere's Original Creole Seasoning, but use your favorite.

2 tablespoons, plus 1 teaspoon Corn Starch

1 teaspoon Salt

1 teaspoon Garlic Powder

1 teaspoon Onion Powder

1/2 teaspoon Paprika

1/8 teaspoon Black Pepper

Place the roast on a cutting board. Use a sharp knife to cut the roast into large chunks. |

Season the roast chunks with creole seasoning. |

Press the "saute" setting on your Instant Pot. Add the olive oil, beef chunks, onions, bell pepper, and minced garlic to the pot to brown the beef and saute the veggies. When the beef is browned, turn the Instant Pot "off". |

In a 2 cup measuring cup or a tall drinking glass, add the broth and corn starch then whisk together to dissolve the corn starch. Add this mixture to the pot. |

Using a wooden spoon, scrape the brown bits off the bottom of the pot. |

Add the salt, garlic powder, onion powder, paprika, and black pepper to the pot and stir into the beef and broth. |

Place the lid on your Instant Pot then turn it to the lock position. Also, it is important to make sure your steam release is set to "Sealing". Press the "Meat/Stew" setting and adjust the timer to 55 minutes. |

When the time is up, allow the Instant Pot to "Natural Release" for 10 minutes, then move the steam release to "venting". Your roast is now ready to serve! Enjoy! |
