Preheat your griddle to 320 degrees. If you do not have a griddle, you may use a flat bottomed, non-stick skillet set to medium low heat. |

In a large mixing bowl, add flour, baking powder, sugar, and salt. Using a whisk, stir all together. |

In a small bowl (like a cereal bowl) add milk, egg, and vanilla. Using a whisk, whip all together. Pour the mixture into the flour mixture and combine until the batter is smooth and there are no lumps. Tip: Using pure vanilla will give you a richer and non-artificial taste. You can find pure vanilla in Walmart and grocery stores. |

Place the butter in a microwave safe dish, cover with a paper towel or napkin then microwave for 10 seconds at a time until the butter is melted. Watch closely! Add melted butter to the batter. Using a whisk, combine all until the batter is smooth. Note: The batter will be thick but still liquid enough to pour. The thickness makes a fluffy pancake. |

Using a measuring cup, (1/4 or 1/2 cup, depending on the size of pancake you want) pour the batter onto the hot griddle. You can cook several at once, just leave a bit of space between each pancake so you can lift and flip them with a spatula. Cook until bubbles have formed throughout the pancake. Using a spatula, flip the pancake and cook until the bottom side is golden brown. Tip: You only need to flip the pancake one time. Flipping more than once will flatten the pancake. Also, do not press the pancake down with the spatula, it will flatten it. Place the cooked pancakes on a plate, top with your favorite toppings like fresh fruit, syrup, etc.. and ENJOY! |
